What do you do with leftover rice?  Well this recipe goes back to the time when I was unmarried.  So as I mentioned earlier I couldnt prepare a good pulav, biryani was just out of the question!  My mum would always insist on us preparing our own tiffin before going to work.  So on one such morning I found myself with prawns and some cooked rice.  Here’s the modified version of that recipe.


750 gms. prawns cleaned, washed and apply 3/4 tsp. salt and 1 tsp. turmeric powder 1/2 an hour before cooking

500 gms. cooked basmati rice. 

Fried Onions as required for decoration.

Mint and coriander leaves chopped for decoration.

Ghee 2-3 tbs. melted

2 potatoes cut into quarters and fried

For gravy :

  • 2 onions finely chopped 
  • 2 tomatoes finely chopped 
  • 2 potatoes cut into quarters 
  • 9 green chillies
  • 1 tsp cumin
  • 7 peppercorns 
  • 1 star anise
  • Few mace 
  • 11 cloves
  • 3 pieces of cinnamon 1″  length
  • 3 garlic cloves
  • 1 bunch coriander leaves cleaned and washed and roughly chopped
  • 1 small limesize  tamarind ball soaked in water
  • Water as required
  • 2 tbs vinegar or lime juice
  • Salt if required
  • 1 tsp jaggery 
  • Oil 1/4 cup or as desired.


Grind green chillies, cumin, peppercorns, star anise, mace, cloves, cinnamon, garlic and coriander along with enough water to form a smooth paste for 2 times.  Last add soaked tamarind and grind again. 

In a non-stick vessel add 3 tbs oil and light your gas stove.  Add the chopped onions and fry till translucent.  Now add the tomatoes and saute till they become mushy. Pour the ground masala and saute till the masala paste thickens a little.  Add the prawns and saute.  Close and after 2 minutes check for salt.  Add vinegar and jaggery and check the taste.  Remove your non-stick vessel from the gas.  

On the gas stove keep a tava.  In an aluminium vessel pour the remaining oil and add 1/2 the fried onions.  Make a layer with the rice and add the prawn gravy on top of the rice.  Add the remaining rice on top of the prawn gravy.  Pour the melted ghee and decorate with fried potatoes, onions, chopped mint and coriander leaves for decoration.  Close and cook on a simmer for 5 minutes.  After 5 minutes your prawn biryani is ready.  Open carefully to avoid the steam and  Enjoy.
