So it’s still hot here.  Summer in its peak and I want to cool off with a salad.  What better than a kakdi or cucumber salad!


  • 2 English cucumbers skin on, washed and finely chopped into rounds
  • 8-10 cherry tomatoes washed and quartered
  • Kalamatta olives green finely cut into rounds
  • Kalamatta olives dark brown cut into halves lengthwise 
  • 1 tsp salt
  • 1/2 tsp paprika powder
  • 1/2 tsp oregano 
  • 1/2 tsp basil 
  • Juice of 1/2 a lime
  • 3 tbs. Extra virgin olive oil

On a plate declaratively place the cut kakdi.  On it place the quartered cherry tomatoes and kalamatta olives.  Make a vinagarette by mixing olive oil, salt, lime juice, paprika powder, basil and oregano.  Drizzle the vinaigrette on the salad.  Enjoy!😀
